Melon Ambrosia

Servings: 8

INGREDIENTS:
    1 melon (cantaloupe, honeydew, or Catawba)
    1 tbs honey
    the juice of one lime
    1 tbs candied ginger, finely chopped
    fresh mint (optional)

DIRECTIONS:
1. Remove the seeds from the melon and cut into small pieces (we prefer to make melon balls). Place the melon in a medium bowl.
2. In a small bowl, mix the honey and lime juice until they are combined.
3. Pour the juice over the melon. Add the candied ginger. Stir thoroughly. Cover and refrigerate for at least one hour.
4. Stir again just prior to serving. Serve in compotes or decorative bowls. Garnish with fresh mint.
